Cauliflower Fried Rice Recipe
1 head of cauliflower(coarsely blended) or 1 lb cauliflower rice
1/3 cup chopped carrots
1/3 cup purple cabbage, sliced
1/3 cup scallions
3 tbsp soy sauce
salt, pepper to taste
2 tbsp olive oil
1. Heat wok on high for 1-2 minutes. Add olive oil.
2. Turn down heat to medium. Scramble eggs.
3. Introduce veggies and let cook for 2 minutes.
4. Slowly add cauliflower rice. Fluffing frequently and let cook for 5 minutes allowing all the moisture to dissipate.
5. Add soy sauce, salt and pepper and let cook for an extra 2-5 minutes.
