Banana Protein Dream Cakes

Oh my! These Banana Dream Cakes are to die for. I had a huge craving for Nikellete’s Cafe strawberries and banana wedding cake today. I decided to experiment in the kitchen and came up with these made up of only 3 ingredients.
2 ripe mashed bananas
2 tbsp cake batter almond butter
1 scoop vanilla Shakeology.
Natural Granola to garnish

​Blend well with fork and place in mini muffin pan. Lining the pan is preferred but I ran out of liners so placed them in the greased pan unlined. I topped them off with a bit of natural granola and placed in freezer for two hours. So yummy! Let me know if you try it!

Cranberry Salsa

 
Ingredients
  • 12 oz cranberries
  • ¼ cup sliced green onions
  • 2 jalapeños, minced
  • ¼ cup fresh cilantro leaves, minced
  • 2 tablespoons finely grated fresh ginger
  • 2 tablespoons lemon juice
  • ½ cup sugar

Instructions
  1. Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised). Place cranberries in a food processor/blender; pulse until finely chopped but not mushy.
  2. Place crushed cranberries in a bowl; mix together with green onions, jalapeños, cilantro leaves, and ginger. Mix lemon juice and sugar, then pour over and stir together.
  3. Cover with plastic wrap and refrigerate and allow flavors to develop. It will be a bit tart to begin with, but as it is allowed to sit it will develop even more flavor.
  4. Can be served as a plain salsa, but is amazing served over cream cheese with crackers.

3 scoops Vanilla Shakeology
1/2 cup organic coconut flakes
1/2 cup cashew or almond butter
1/2 cup organic dark chocolate chips
1/2 cup honey
2 tbsp coconut oil, melted
sprinkles

Mix well and roll into 24 balls. Then, roll balls into sprinkles. Refrigerate for 1-2 hours or overnight for best taste! Keep refrigerated or frozen. Enjoy as a snack.
